PEIXINHOS DA HORTA

INGREDIENTS

  • 300 gr green beans
  • 100 gr all purpose flour
  • 3 eggs
  • 1 yellow onion
  • pepper, parsley and salt to taste
  • 500 ml vegetable oil for frying

INSTRUCTIONS

Wash the green beans, trim the ends, and remove the strings. Place them in a saucepan with salted water and a peeled onion. Bring to a boil over high heat, then reduce to low and cook for about 10 to 15 minutes until tender. Once cooked, drain them well and set aside.

In a bowl, mix the flour, eggs, pepper, chopped parsley, and a little salt with a fork until you get a smooth, creamy batter. Dip the green beans into the mixture, three at a time, until they are fully coated.

Heat oil in a skillet over medium-high heat. Once hot, add the coated green beans and fry them on both sides until golden brown. Transfer to a plate lined with absorbent paper to remove excess oil.

Sprinkle with a little salt and enjoy!
