BANCAKES (BANANA PANCAKES)

INGREDIENTS

  • 2 ripe bananas
  • 1 egg
  • 60 gr spelt flour (or rice
  • flour, spelt flour,
    whole grains…)
  • 1 table spoon brown sugar, coconut sugar,
    maple syrup or any other sweetener of
    your choosing
  • chocolate chips (around 30gr) / cinnamon
  • coconut oil
  • fresh berries, raisins or coconut flakes

INSTRUCTIONS

Mash the ripe bananas with a fork in a bowl.
Add the egg, flour, and sugar, and mix it all together with a whisk. If you want, you can add chocolate chips or a little cinnamon. Heat a pan on medium and put some coconut oil in it. Pour the pancake batter into the pan. When bubbles appear on top, flip the pancake and cook for 2 more minutes. Serve them on a plate and add maple syrup, fresh berries or coconut flakes if you like!
