BANCAKES (BANANA PANCAKES)
INGREDIENTS
- 2 ripe bananas
- 1 egg
- 60 gr spelt flour (or rice
- flour, spelt flour,
whole grains…) - 1 table spoon brown sugar, coconut sugar,
maple syrup or any other sweetener of
your choosing - chocolate chips (around 30gr) / cinnamon
- coconut oil
- fresh berries, raisins or coconut flakes
INSTRUCTIONS
Mash the ripe bananas with a fork in a bowl.
Add the egg, flour, and sugar, and mix it all together with a whisk. If you want, you can add chocolate chips or a little cinnamon. Heat a pan on medium and put some coconut oil in it. Pour the pancake batter into the pan. When bubbles appear on top, flip the pancake and cook for 2 more minutes. Serve them on a plate and add maple syrup, fresh berries or coconut flakes if you like!
